On the South Island, start by visiting the beaches of Abel Tasman National Park or cruising through the Marlborough Sounds.  Travel down the east coast, stopping to go whalewatching and spend an overnight in an ocean-view treehouse in Kaikoura before continuing down to Christchurch, an English city with its River Avon.  Cross the Southern Alps by rail to the west coast on the TranzAlpine train through Arthur's Pass; hike the Fox Glacier or bungy at Queenstown.

Travel to Milford Sound by road, then cruise the Sound before returning by scenic flight to Queenstown.  Drive to Mount Cook with its stunning aqua-colored lake and spectacular flightseeing opportunities.

Visit the Albatross Colony near Dunedin and stay in some of the best country houses and inns to be found.
